This time, at TSUGU Kyoto Sanjo 1F coffee and wine ushiro, we will welcome Mr. Hitomi Aiya Hitomi Doi and hold a Kogin sashimi workshop "inheriting the traditional craft of Tsugaru".
Kogin sashimi is one of the techniques of sashimi transmitted to Tsugaru, Aomori Prefecture. During the Edo era, mainly farmers, sashimi was sewn with cotton thread on clothes linen to prevent severe cold.
The basic pattern of Kogin sashimi is called "Modoko", and currently there are about 40 types.
It features a beautiful geometric pattern by stabbing.

"Coffee and wine ushiro" operated by Kinoshita Shoten, which offers "a natural basis" concept, roasted and extracted coffee beans, and sandwiches that are particular about ingredients from Seto. We convey to “ushiro” (behind the back) of the special coffee and wine, and also the container used in the shop.
